It adds a nice umami to the dish. But if you prefer not to use alcohol, you can use chicken stock as an alternative.

You can. I think freezing it will slightly change the consistency of the sauce, but shouldn’t be a big problem.

I used mirin because I didn’t have any shaoxin and the grocery store didn’t have it or sherry in stock. It came out great. I added some julienne carrots and doubled the sauce recipe.
