I’m so happy to hear the recipe works with a vegan adaption! I do like to use soy curls too. It mimics the texture of the meat really well and it absorbs a lot of flavor.

We made a vegan version by substituting one cup of soy curls for the beef. After the soy curls were soaked and squeezed, we marinated as per the recipe, substituting vegan oyster sauce and omitting the baking soda. Everything else we kept the same, except for swapping for vegan chicken broth in the sauce. The soy curls came out brown and caramelized, and the sauce is almost addictive. We’ll be making this often – we’re loving your Homestyle cookbook, too.
