It reminded me of the Taiwanese ground pork dish my mom used to make. I found it to be a bit too salty, though; even though I left out the eggs (we often have eggs for breakfast, so wanted to omit them for dinner), and I doubled the green peas and added about a bowl’s worth of minced mushrooms. Makes a great sauce to eat with rice and a side of Chinese veggies.

Yeah it’s a finish oil that you can add at the end, but you can skip it too.

I did add some small things: five spice, MSG, green onion for garnish. I did have the issue with taking a long time to reduce, but I think it’s because of using a wok, so there was less surface area to evaporate from. Only question: sesame oil is the ingredients list as optional, but it’s not anywhere the instructions. Would it just have been a topper?

Instead of 5 eggs, I cut up a block of medium firm tofu and it was awesome. I consider this dish a kid friendly version of Mapo tofu. Bonus: this dish yields plenty of leftovers. Thank you for the wonderful recipe, this will now stay in the rotation.
