This is a fantastic, delicious recipe and I now do it pretty much every week. It works with chicken thigh or breast (I’ve done it with big prawns too), and it’s also a very handy ‘fridge bottom’ dinner because you can chuck in veg that needs eating up and it all just comes together and works.

The sauce and aromatics are fantastic, with good spice balance and depth of flavour. It’s well worth hunting down proper fermented black beans and good quality Shoaxing wine for this — totally worth the effort.
