Took to making this a chicken and Eggplant dish by first browning the chicken, then the eggplants putting each aside. Then the aromatics went in followed by the chicken and eggplants and finally double the sauce quantity in the recipe (which could have been 1.5 the sauce quantity). Super delicious. Thanks

Now, I know how to prep the eggplants before cooking. Did the soak, and it worked great. Cornstarch coat was great tip, too. Dish was so satisfying. Made a 3x batch, to have enough leftovers:) Will definitely make again.

I served it with steamed brown rice that I mixed with some crisped tempeh bacon (Lightlife brand), and it made a great vegan meal. This one’s a keeper! Thank you so much for sharing the recipe!

My family says that it tastes bettter than the best chinese restaurants. You can easily add another protein and double the sauce portion to accomodate the extra ingredients. I have made it with tofu, and shrimp- just treat it the same as the eggplant: sprinkle with cornstarch, fry individually and at the end, combine the fried effplant, protein and then stir in the sauce. You will not be disappointed!!
